Roasted Chili-Lime Cod

1In a small bowl combine paprika , dried parsley , oregano , chili powder , garlic powder , cumin , salt , freshly ground black pepper , and cayenne pepper .paprika: 1 tsp, dried parsley: 1 tsp, oregano: 1/2 tsp, chili powder: 1/2 tsp, garlic powder: 1/2 tsp, cumin: 1/4 tsp, salt: 1/4 tsp, freshly ground black pepper: 1/4 tsp, cayenne pepper: 1/8 tsp

2Mix well.

3Using extra-virgin olive oil , brush cod fillets and then rub the fillets with the spice mixture.extra-virgin olive oil: 1 tbsp, cod fillets: 2

4You will use the entire rub – so make sure to coat them very well.

5Refrigerate the cod fillets for at least 30 minutes, or up to 12 hours.

6Preheat oven to 450º.

7Place the cod fillets on a foil-lined baking sheet .

8Roast in the oven for ⏱️ 10-12 minutes .

9The fish will flake easily and be opaque throughout when it’s cooked through.

10Meanwhile in a small saucepot , melt unsalted butter (or use ghee for Paleo & Whole30) with extra-virgin olive oil .unsalted butter: 1 tbsp, extra-virgin olive oil: 1 tbsp

11Add lime zest and lime juice and swirl the pan to mix.lime zest: 2, lime juice: 2

12Serve the cod overtop of your chosen accompaniments and top with the lime butter.
